Corporate Email -> Migrating to New Server with New MX Records

We are rebuilding a site for a company at the moment and they also want to switch hosts. At the moment (I believe), their current host is also their email host. There are a large number of email accounts. What would be the most seamless way to migrate the accounts over to the new host (linode). I am assuming (praying) that the individual mailboxes do not need to be setup, etc, ? If most of the users are currently using Outlook will their password information be the same?
