IP Address Issue & accessing site before DNS

Hope you are well.
Q1. I'm trying to find where I need to edit the settings for where the IP address points to, as I've now sold the domain and I need it for Q2!
Was this in the bible set-ups? Cant seem to find it. When I type in the IP or the server's address: MYNAME.vm.bytemark.co.uk it points to the old domain.
I've looked through the DNS records and cant find anything. Just wondered if this was something we did in the set-up tutorials?
Q2. I want to preview a site before I move it over from another host, to make sure everything is tickey boo.
Should this work: http://your-server-IP-address/~folder-name?
Obv I cant check at the mo as the IP is pointing to this sold domain, damn it!

is there a DNS manager where you can edit domain settings, and have you changed your nameservers for the new domain name to point to your vps?

Sussed it. I still had the site in the enabled/available and it must default alphabetically when you access the IP direct.
