anthony, edit these files:-
/etc/hostname
/etc/hosts
/etc/postfix/main.cf(Refer to http://vpsbible.com/email/setup-postfix-email/ for more detail.)
You can try to set the change without a reboot like this:-
sudo /etc/init.d/network restart
take a look:-
hostname
if it's not changed you'll need a reboot :(
