Multiple domains each with locked-down FTP/SFTP?

Been lurking about here on & off for a while, it's really good to see the collection of scripts and tuts growing. I'm finally ready to go, got a shiny brand new VPS with 1000MiB memory, Ubuntu 10.0.4 (32bit) and a couple of customers waiting patiently...
I'm about to run the stackscripts to set up multiple domains, each with a single site install of WordPress.
The big question is: I'd like each domain to have a user account associated with it, so that customer can FTP (or even better, SFTP) files, but NOT have shell access or navigate up above their public_html folder. Ideally, but not critical, I'd also like them not to be able to delete/change any of the WP files. Is any of that possible, or are we getting into really advanced territory?
And finally... no mailserver is needed for emails, as customers will use Google Apps, but one customer wants to run PHPlist for sending out email newsletters. Does this means I'll need a mailserver, or will the postfix thingy be enough?

Simon, you need to set up a ** chroot to jail users ** .. I have nothing on this site about setting that up (would make a juicy script one day)
