Spam prevention & understanding the process

What are the best practice methods for preventing a your VPS being used for sending spam?
I've had a site compromised previously through an out of date script - so I know the 1st port of call is ensure that scripts and sites are all bang up to date.
Is there a way to limit mail sending over a certain time period and alert the webmaster if that is exceeded?
All my sites use google apps for the mail service - do PHP scripts actually need postfix on the server, or could emails not route directly through Google? i.e. can I disable all email sending packages on the machine? Or does PHP need something to send the email out in the first place...........not really sure how it works.
Would appreciate some help on this from the community!
